Coleslaw with Avocado Mayonnaise

Captain's Coleslaw


2 cups of shredded red cabbage
2 cups of Napa Cabbage
2 Large Carots, julienned
3 Celery Stalks, julienned
½ Red Pepper, seeded, julienned
½ Yellow Bell Pepper, Seeded


1 Ripe avocado mashed
½ Cup of Mayonnaise
¼ tsp salt
Pepper to taste

1. Use a food processor or chop by hand, both cabbages
2. In medium bowl combine cabbage, carrots, celery and peppers
3. In a separate bowl, mix together avocado and mayonnaise
4. Mix dressing with vegetables, season to taste
